The first time I ate a cucumber abroad (out of French Guiana), I really wondered why people bother to buy them. When you are used to the richly-tasting Cucumber from the Caribbean, you start researching all studies about soil, fertilisers and farmers’ code of conducts. I personally needed to understand!

Thankfully there is a way to bypass cucumbers lack of taste; and eat them as the great sides they are supposed to be. When eating a dry Tuna chunks (in sunflower oil) or Corned beef with rice, the two following simple recipes will give you a satisfying pickle-like experience of your cucumber. It complements very well salty meats on your taste buds.

Budget for Ingredients

  • 66 g of  Tuna Chunck or Corned Beef

B & M – 4 x 132g


  • Salt
  • Ground Black Pepper
  • Vinegar or lime
  • Oil
  • Hot pepper scotch bonnet (to your capacity)
  • Chopped Parsley
  • 1 full teaspoon of Salt 
  • Ground Black Pepper
  • Vinegar 
  • 2 Big spoons of water
  • 1 Big spoon of white sugar
  • Optionally: Hot pepper scotch bonnet
